Lettuce Wraps
Chicken Mixture
3 tbsp oil                                                 1 tsp garlic
2 boneless chicken breasts                       4-5 leaves lettuce
1 cup water chestnut                                3 tbsp chopped onion             
2/3 cup mushrooms
Stir Fry Sauce
2 tbsp soy sauce
2 tbsp brown sugar
½ tsp rice wine vinegar
Bring oil to high heat in a large wok. Sauté chicken 4-5 min per
side or until done. Remove from pan and let cool. Keep oil in the
pan and hot. As chicken cools mince mushrooms and chestnuts.
mix the sauce together in a small bowl. When chicken is cool
mince it. With pan still on high heat add tbsp oil, add chicken,
garlic, onion, chestnuts and mushrooms to pan. Add sauce and stir
fry a couple min. serve in lettuce or over rice.


Chicken Pot Pie
2 (10 oz) cans Campbell's cream of chicken soup
2 (about 9 oz) packages frozen mixed vegetables, thawed
2 cups cubed, cooked chicken
1 cup chicken broth combined with 2 tbsp flour
2 pie shells
Preheat oven to 400 degrees.
Mix soup, vegetables, chicken and broth. Pour into pie shell.
Cover with top shell. Bake for 35 min or until golden brown.

Beef Taco Ring ( This is a  great Pampered Chef recipe)
1 lb hamburger
1 package taco seasoning
1 ¾ cups shredded cheddar cheese
2 packages crescent rolls
Preheat oven to 375 degrees. Cook beef. Add seasoning and
cheese. Lay out rolls triangles pointing our forming a large sun.
scoop meat mixture in a circle on the inner edge. Pull points up,
over and under into the inside. Bake 25-30 min. Serve with normal
taco toppings.

Calzone (This recipe came from my mother in law)
  Meat Mixture
1 cup Parmesan cheese                  1 cup raw pork sausage
1 ½ cups Mozzarella cheese            1 ½ cups chopped mushroom
1 cup raw hamburger                       1 loaf frozen bread dough
Sauce
2- 8 oz Tomato sauce                      1 tsp oregano
1 clove garlic                                    ¾ tsp sweet basil
2 tsp sugar
Remove bread from freezer 3 hrs before you want to start
cooking. Place it on wax paper that has been greased at room
Temperature.
Brown meats. Put in a large bowl. Add cheeses and mushrooms and mix well.
Cut each bread loaf into 5 pieces. Roll out one piece at a time. Place about 1/3 cup mixture into middle of circle. Pull up sides and pinch together. Place pinched side down on ungreased cookie sheet.
Bake @ 350 degrees 20 min.
While baking mix and heat sauce



Side Dishes
Calico Beans
 6 slices bacon cut up and fried                  1 lb ground beef  
1 large onion                                              1 can butter beans
1 can kidney beans                                    1 20 oz can pork and beans
¼ cups ketchup                                          ½ cup brown sugar
1 tbsp yellow mustard
Fry bacon and brown beef and onion together. Oven bake all ingrediants
at 350 degrees for 1 hour. Or slow cooker and simmer for about 2 hours.

Mac N Cheese
8 oz dried elbow macaroni (2 cups)               2 ½ cups milk
2 tbsp Butter                                                  2 tbsp flour           
1 ½ cup shredded cheddar cheese                1/8 tsp black pepper
1 ½ cup shredded american cheese

Cook macaroni, drain and set aside. In a medium sauce pan melt butter. Stir
in flour and pepper. Add milk all at once. Cook and stir over medium heat
until slightly thickened and bubbly. Add cheese, stir until melted. Stir in
cooked macaroni. Transfer to a casserole dish. Top with additional cheddar
cheese.
Bake uncovered @ 350 degrees for 25-30 min. let stand 10 min before serving



Soups

Wild Rice Soup
 1 lb bacon fried and crumbled (or ham)  
2 cups of cooked wild rice
3 cans of cream of potato soup
1 large can of mushrooms with juice
2 cups shredded Velveeta cheese
2 cups of water
1 pint half and half
Dash of pepper
Mix all ingredients and simmer. Just
before serving add 1 pint of half and
half.

Tortilla Soup
1 lb ground beef                               
2 cans 16 oz each diced tomatoes undrained
1 medium onion chopped
1 16oz can tomato sauce
2 cans 16 oz each pinto beans undrained
½ package taco seasoning
Tortilla chips
Cheese

Brown meat with onion in a large stock pot. Add remaining
ingredients except chips. Simmer 30 min. crush chips and add to
soup until thickened.

Bean soup
Navy beans                            Garlic salt
Pinto beans                            Bay leaves
Carrots                                   Celery
Onions                                   1 cup ketchup
1 ham bone and ham pieces

Boil ham bone and all ingredients. Add ketchup right before you serve.

Chilli
1 lb ground beef                                       1 8 oz can tomato paste
1 cup chopped onion                                1 tsp salt
½ chopped green pepper                         1-2 tsp chili powder
1 large can chopped tomatoes                 1 bay leaf
1 15 oz can kidney beans
In a large pot, brown the meat and the onion and green pepper.
Stir in the remaining ingredients, cover and simmer about an
hour.



Muffins/Breads
Glazed Strawberry Lemon Struessel Muffins
 1 ½ cups flour                                            ½ cup milk
½ cup sugar                                               ½ cup melted butter
2 tsp baking powder                                   1 egg
1 tsp cinnamon                                          ¼ tsp salt
1 ½ cup quartered fresh strawberries
GLAZE
½ cup powdered sugar
1 tbsp lemon juice

Preheat oven to 375 degrees
In a bowl combine flour, sugar, baking powder, cinnamon and salt. In another bowl combine milk, butter and egg. Stir into dry mix. Fold in Strawberries. Bake 20-25 min or until done
GLAZE
In a small bowl combine sugar and lemon juice. Stir until smooth. Drizzle glaze over warm muffins.

Raspberry Muffins
 1 medium egg, beaten                           2 ½ cups flour
1 cup fresh raspberries                          1 cup milk
½ cup melted butter                               2 tbsp sugar
2 tsp baking powder                              ¾ tsp salt

In a large bowl, mix together flour, sugar, baking powder and
salt.
In a large bowl, mix together egg, mil and butter, then add to
the dry ingredients and mix. Add the raspberries, stirring so they
are spread out.
Pour into greased muffin tins.
Bake at 375 degrees for 25 min.

Zuchinni Bread
 3 cups flour                                                     1 cup vegetable oil
1 tsp salt                                                          2 ¼ cups white sugar
1 tsp baking soda                                             3 tsp vanilla
1 tsp baking powder                                        2 cups grated zucchini
3 tsp ground cinnamon 1 cup chopped walnuts
3 eggs
Grease and flour 2 loaf pans. Preheat oven to 325 degrees.
Sift flour, salt, baking powder, soda and cinnamon together in a
bowl.
Beat eggs, oil, vanilla and sugar in a large bowl. Add sifted
ingredients. Beat well. Stir in zucchini and nuts. Pour into pans.
Bake 40-60 min.



Desserts

Fudge Bars (From my Aunt Lor)
½ cup sweetened condensed milk
1 Tbsp butter
¼ tsp salt

*Melt above in double boiler, remove from heat and add ½ cup walnuts
And 1 tsp vanilla.
Cream: ½ cup margarine and 1 cup brown sugar Add: 1 egg, 1 tsp vanilla,
stir in 1 ¼ cup flour, ½ tsp soda, ½ tsp salt and 1 ½ cups oatmeal.
Press 2/3 of dough in a 9x9 pan. Spread chocolate filling over the pressed
Dough. Then crumble the remaining dough over the top.
Bake at 300 degrees for 25 min or until light golden brown.

Peanut Butter Temptations
 ½ cup butter                                   ½ tsp vanilla
½ cup brown sugar                         1 ¼ cup flour
½ cup Peanut butter                       ¾ tsp soda
1 egg                                               ½ tsp salt
½ cup sugar                                    1 bag miniature pb cups 

 Beat butter, brown sugar, sugar, peanut butter, egg and vanilla until fluffy. Stir together soda, flour and salt, add to butter mixture. Shape dough into 1 “ balls in mini muffin pan bake at 375 degrees 10-12 min. remove from oven. Immediately press pb cups into center of each cookie. Cool. Makes 35-40 cookies

Karmel Korn (From My Mother In Law)
2 cups brown sugar ½ cup karo light corn syrup
1 cup margarine ½ tsp soda
5 quarts popped popcorn dash of salt

In a medium sauce pan mix brown sugar, corn syrup, margarine
and salt. Bring to a boil and boil for 5 min. remove from heat and
add soda, mix well. Pour over popcorn. Mix well. Pour candied
popcorn on two baking sheets and bake 1 hour at 250 degrees.
Stir every 15 min.
Take out of oven and pour onto waxed paper to cool.

Smore Snack Treats
 36 squares Graham Crackers (2 sleeves)
3 tbsp margarine or butter
1 (10oz) pkg. Marshmallows
2 squares semi sweet baking chocolate (chopped)

Break crackers into bite sized pieces. Set aside. Melt margarine in
a large sauce pan on medium heat. Add marshmallows. Cook until
melted completely. Add to crackers. Mix until evenly coated.
Spread into lightly greased 9x13 inch pan. Sprinkle with chocolate
pressing lightly into mixture. Refrigerate at least 20 min before
cutting.



Cookies
Peanut butter Chocolate chip
½ cup butter (softened) 1 egg
½ cup peanut butter 1 ¼ cup flour
½ cup sugar ½ tsp baking powder
½ cup brown sugar packed ½ tsp baking soda
¼ tsp salt 1 cup chocolate chips

Preheat oven to 375 degrees
Cream butter, peanut butter and sugars. Add the egg and mix until
fluffy. blend the flour, baking powder, soda and salt together well.
Add to butter mixture. Add chocolate chips.
Spoon onto a lightly greased cookie sheet. Bake 10 -12 min.


Oatmeal Chocolate chip (From my friend Aimee)
1 cup butter 1 ½ cups flour
¾ cup packed brown sugar 1 teaspoon baking soda
¾ cup white sugar 1 teaspoon salt
2 eggs 2 teaspoons Vanilla
3 cups rolled oats 2 cups chocolate chips
Pre-heat oven to 350 degrees
Cream butter and sugars. Add eggs and vanilla, mix thoroughly.
Combine Baking soda, salt and flour, add to cream mixture. Add
Oatmeal and chips. Stir until well combined.
Bake 15 min.


Pies
Rhubarb Custard Pie
4 cups sliced Rhubarb 1 ½ cups sugar
¼ cup flour 3 eggs
1 tbsp butter Salt
Mix sugar, flour, and a dash of salt. Beat eggs and add to the
sugar mixture. Mix until smooth. Stir in rhubarb. Fill pie shell.
Lattice top. Dot with butter before putting on top. Bake at 400
degrees for 50 min.
